Grillo SpumanteThe grapes are harvested by hand in boxes through a careful selection of each bunch and only at dawn, in order to have high quality grapes and to preserve the health of the plants.
Baglio Aimone wines are fruit of a careful selection of only Sicilian local grapes Grillo, Zibibbo, Catarratto, Grecanico and Nerello Mascalese, in thermocontrolled steel tanks, in order to preserve the authenticity of the varieties.
The name “Aimone” and the names of our wines belong to the characters of the romances of chivalry, then adopted by the Sicilian tradition thanks to the Opera dei Pupi. In fact the first epic poem was “I quattro figli di Aimone”, (The four sons of Aymon) that inspired the romances about the paladins and their exploits of Ariosto and Boiardo in Orlando Furioso and Orlando Innamorato
